Here is a fresh and simple recipe for Finger Chips (French Fries) — crispy outside, soft inside, just like restaurant style.
Fresh Finger Chips (French Fries) Recipe
Ingredients:
- 4 large potatoes (fresh and firm)
- Salt to taste
- 1/2 tsp black pepper powder (optional)
- 1 tbsp cornflour (optional for extra crispiness)
- Cold water
- Oil for deep frying
Instructions:
1️⃣ Wash & Cut Potatoes:
- Peel the potatoes.
- Cut them into long, thin strips (finger shape).
- Keep all strips of similar thickness for even frying.
2️⃣ Soak in Cold Water:
- Place the cut potato strips in cold water for 20-30 minutes.
(This removes excess starch and makes them crispier.)
3️⃣ Boil Lightly (Blanching Method):
- Boil water with a pinch of salt.
- Add potato strips and boil for 2-3 minutes only (do not overcook).
- Remove immediately and spread on a cloth or tissue to dry fully.
4️⃣ Dust with Cornflour (Optional):
- Lightly sprinkle cornflour on the dried potato strips.
- Toss them gently so they are coated evenly. (This gives extra crispiness after frying.)
5️⃣ First Fry (Low Heat):
- Heat oil on medium heat.
- Fry the potato strips for 2-3 minutes until soft but not brown.
- Remove and cool them. (You can store at this stage in the fridge for later if needed.)
6️⃣ Second Fry (High Heat for Crispiness):
- Heat oil on high heat.
- Fry the half-cooked potatoes until golden and crispy.
- Remove on tissue paper to absorb excess oil.
7️⃣ Season & Serve:
- Sprinkle salt and pepper (or chat masala) as per taste.
- Serve hot with ketchup or mayonnaise.
Tips:
